For generations, milk in Indian households wasn't identified by a protein type.

There was no "A1 milk" or "A2 milk."

There was simply milk, often coming from indigenous cows, brought home fresh and transformed into curd, makkhan, buttermilk and eventually ghee.

Today, however, supermarket shelves tell a very different story.

You'll find A1 milk, A2 milk, A2 ghee, organic milk, grass-fed ghee and countless other labels.

But what exactly is A2? How is it different from A1? And why does Ishavasyam begin its ghee-making journey with milk from indigenous cows?

The answer begins not with the ghee.

It begins with the milk.

First, What Is A1 and A2?

Cow's milk contains two major families of proteins: casein and whey.

One of the important casein proteins is called beta-casein.

A1 and A2 are simply two naturally occurring genetic variants of this beta-casein protein.

They are remarkably similar.

In fact, A1 and A2 beta-casein differ by just one amino acid at position 67 in a chain containing more than 200 amino acids.

It sounds like an incredibly small difference.

But that small change affects how the protein can be broken down during digestion.

Where Did A1 and A2 Come From?

A2 is generally regarded as the ancestral variant of beta-casein.

Over the history of cattle domestication, genetic variations arose, including the A1 variant. Different cattle populations subsequently developed different frequencies of these genes.

This becomes particularly interesting when we look at India's indigenous cattle.

Research involving thousands of Indian cattle has found a very high prevalence of the A2 allele among native Indian breeds. One large genetic analysis reported an A2 allele frequency of approximately 95% among the Indian cattle studied.

Another study looking at breeds including Gir, Sahiwal and Tharparkar found that around 80% of the indigenous cattle studied had the A2A2 genotype, with the frequency reaching approximately 93% among the Gir cows sampled.

This doesn't mean every desi cow automatically produces exclusively A2 beta-casein.

Genetics, rather than the word "desi" alone, determines whether a cow is A1A1, A1A2 or A2A2.

But it does explain why India's indigenous cattle have become such an important part of the A2 conversation.

What Happens When We Digest A1 and A2 Milk?

This is where the scientific difference becomes more interesting.

When we consume milk, digestive enzymes break its proteins into smaller fragments called peptides.

During digestion, A1 beta-casein can release a peptide called beta-casomorphin-7, or BCM-7, more readily than A2 beta-casein.

The difference is related to that single amino acid we discussed earlier.

Researchers have therefore investigated whether A1 and A2 milk might affect digestion differently.

And this is currently where some of the strongest evidence supporting A2 milk lies.

Potential Advantages of A2 Milk

Based on the research available today, there are several reasons A2 milk has attracted attention.

1. Potentially better digestive tolerance

This is currently the most compelling potential advantage.

Some people who experience bloating, abdominal discomfort, bowel urgency or other symptoms after consuming ordinary milk may tolerate A2-only milk better.

2. Different breakdown during digestion

A2 beta-casein behaves differently from A1 beta-casein during digestion and is much less prone to releasing BCM-7.

This biochemical difference is one of the primary reasons scientists continue to investigate A2 milk.

3. Naturally prevalent among many indigenous Indian cattle

A2 isn't an artificially engineered protein or a modern nutritional invention.

Research has demonstrated a particularly high prevalence of A2 genetics among India's indigenous cattle populations.

For Ishavasyam, However, A2 Is Only the Beginning

This is where our story is slightly different.

We don't believe that putting "A2" on a jar automatically makes good ghee.

Because good ghee isn't defined by a single word.

It comes from a chain of decisions:

Which cows does the milk come from? How are those cows cared for? How is the milk handled? Is the milk turned into curd first? How is the butter extracted? How quickly is it processed? And how is that butter finally transformed into ghee?

For us, the answer to these questions matters just as much as the A2 label itself.

That's why Ishavasyam looks back to something Indian households understood long before modern dairy processing existed:

The traditional Bilona method.

Milk → Curd → Makkhan → Ghee

There are faster ways to manufacture ghee.

The Bilona method isn't one of them.

And that's precisely the point.

Instead of mechanically separating cream from milk and processing that cream directly into ghee, the traditional Bilona method begins with whole milk.

The milk is first cultured into dahi.

That curd is then churned — traditionally using a wooden bilona or mathani, until fresh makkhan separates.

Only then is the makkhan slowly heated until its moisture evaporates and the golden ghee separates.

So the journey looks beautifully simple:

Milk → Dahi → Makkhan → Ghee

The defining characteristic of Bilona ghee is therefore not merely slow heating. It's the curd-first process.

It's slower.

It's more labour-intensive.

And it produces less ghee for the amount of milk and time involved.

But that's the method we choose.

Our Belief

We could simply write "A2 Ghee" on the jar and stop there.

But we believe the story behind those two characters matters more.

Our approach begins with milk from indigenous desi cows, cattle populations among which scientific research has found a high prevalence of the A2 beta-casein variant.

Then comes patience.

The milk becomes curd. The curd is churned into makkhan.

The makkhan is slowly transformed into ghee using the traditional Bilona philosophy rather than simply taking the fastest industrial route from cream to fat.

There are easier ways. There are faster ways. There are certainly cheaper ways.

We chose the older way.

Not because everything old is automatically better.

But because some traditions survived for generations for a reason, and when modern science gives us the tools to understand our ingredients better, we believe tradition and science can sit at the same table.
